With creamy sour cream and chives mashed potatoes

Seasoned bone-in chicken thighs skin on overnight. Added molasses and unsalted butter for the sweet potato and fig to the dutch oven. Thighs smoked over the dutch allowing the chicken dripping to mesh w/ the fruit and veggie. Increased the temperature and lowered the chicken into the confit to finish, flipped the figs to caramelized. Pulled the bird @ 170° internal.

Turned out pretty okay.

Soaked in evaporated milk and dusted in corn flour (not corn starch).

My wife gets induced tomorrow, and my aunt came over to help us finish getting the house ready. So, I made carbonara for the “last supper” at home. See you all on the flip side.
