I've just cured 4 belly's for bacon on a Monday... I'm going to be away from home for 12 days but my Mrs will be home to turn them daily ... I've vac sealed them will 12 or 13 days be to long before I smoke them ?? Thanks all

I have just opened a package of bacon that expired nearly two months ago and I've just realised that it was a bit frozen. Do you reckon is it ok to eat?

400F for 20 minutes. North Country Smokehouse applewood bacon. Eggs and homefries. Great breakfast.

I but 3 lbs of pork belly in a cure, using Prague Powder, and put this in the fridge.

Well life got in the way and it’s been in the fridge for 5 or 6 weeks.

Can I still use this? Should I do anything differently with it?
