I think you can do this easy. Just film the whole thing normal, then select only the frames you want at distances apart, focusing on the walker

I imagine you just film the person walking normally and then stabilize him in post and then you cut out all the frames in between the start of each walk cycle, except you advance the cycle each time (so like cut out 1.02 walk cycles or whatever). If cameraman had a makeshift dolly of some kind that would be ideal. Just a guess.

I don't think that's the process they used here. It's just stop motion but the figure you are posing for each shot is a whole person. That's why the walker and the background has a very mild vibration or jitter to it

The process I described is a way to achieve stop motion poses and placement that is actually achievable (I.e. by extracting individual frames from video of an actual gait). I don't know how they could have achieved this by separately posing each frame.
