Uncalibrated. This is why calibration shots and grey cards exist, look them up. Normally I’d suggest editing this in post, but the base models don’t do RAW, so you’ll lose quality (but can absolutely recover the color).

Just use your internal editing in the iphone gallery app to edit it. More contrast, push down the blacks, increase lights and exposure, boost saturation. Just play with it.

Probably auto exposure, it is designed to adjust exposure until the average brightness of the photo is "middle grey" / "18% grey"

Ah, yea that’s just from it picking up city/town lights because of the longer exposure and probably a majority of the shots it’s taking before it compiles it together have that same light pollution.

Too much light pollution, in combination with computational photography.
If you have the regular 17, you should have a setting to adjust photographic styles.
