Recipe (although my Brazilian fiancée says the tomato sauce and paste are unnecessary):
Ingredients
1.5 to 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons unsalted butter
1 tablespoon olive oil
1 medium yellow onion, finely diced
3 to 4 cloves garlic, minced
8 oz button or crimini mushrooms, sliced (optional)
1/2 cup tomato paste or tomato sauce
1 tablespoon ketchup
1 tablespoon Dijon mustard
1 to 1.5 cups heavy cream (or traditional Brazilian table cream / creme de leite)
Salt and black pepper, to taste
Cooked white rice and crispy potato sticks (batata palha) for serving.
Instructions
Season the chicken: Pat the chicken thigh pieces dry and season them generously with salt and pepper.
Sear the chicken: Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through (about 6–8 minutes). Remove the chicken from the pan and set it aside.
Sauté aromatics and mushrooms: In the same skillet, add the remaining butter. Add the diced onions and garlic, sautéing until soft and translucent. If using mushrooms, add them now and cook until they release their moisture and brown slightly.
Build the sauce base: Stir in the tomato paste, ketchup, and Dijon mustard, mixing well with the onions and mushrooms. Let it simmer for 2 minutes.
Combine: Return the cooked chicken and any accumulated juices back into the skillet, stirring to coat everything in the tomato mixture.
Add the cream: Lower the heat. Stir in the heavy cream gently. Heat the mixture through over low heat, but do not let it boil or the cream may separate. Taste and adjust salt and pepper if needed.
Serve: Spoon the warm chicken stroganoff over a bed of white rice and top generously with crispy potato sticks (batata palha).
