Am looking for recent great fics that have choosing classes as a focus. Like Rinoz Book of the Dead or Defiance of the Fall. The LN Overlord also had a pretty cool Job/Race classes system.

You could try ‘Chaotic Craftsman worships the Cube’; its main focus is on the Skill system but the Job system has a good amount of focus too. With the skills you gain giving you classes that can further unlock unique classes based on your skill progression.

Bog Standard Isekai. Not only does the MC choose his first class, but you can reset your class, you can evolve your class. There are evil classes you probably shouldn't pick, but then again maybe you need to...

Runeblade! Unlocking a strong class is the MCs goal in book 1, and then it expands from there.

I'm writing a similar one but its a different take.

There are Classes you choose after Rank 10, that are numbered as; 1 Star to 7 Star.

Once you get a Class, you combine it with your Template (power) and that gives the Class its name and core ability.

If your power is Fate Manipulation, your three Star Class may be "Fatemancer". After that, you get the chance to add a Skill of your liking to one of those stars, let's say the Skill, "Identify".

Your Class now becomes "Seer of Fate", because of the new added Skill. The Skill is lost from your arsenal, and you can learn a new one (people have limited skill slots in this world). After the next league, you can add another skill, so on and so forth.

Skills can be removed but the're permanently lost.

Also, there's grades from F to SSS for the Skills, and the higher the Skill grade, the better your Class benefits. Also, there's a compatibility rate involved. From compatible -> great compatibility -> Perfect compatibility.

It also adds on to your Class benefits. If the added Skills are incompatible to your Class, it'll in turn decrease your Class benefits.

I'm still at book one, chapter 17 out of 100, and this is something that will show up in the middle stages of book 2 at the very least.

Primal Hunter is all about classes, and the MC has two, a class and a profession. This is not unique to him, all the enlightened races(humans, elves, dwarves, etc) have both.

Runeseeker plays into this really nicely, with the MC raised in a society his 'race' doesn't actually belong to and is seen as the Ever Fail because he can't pick up any of their classes. The System requires different races and classes to work together to tackle dungeons, and offers stat bonuses and rewards based on class. At different ranks, a character has the chance of getting a class evolution based on their actions, and what the System wants from them... I won't spoil things, but the MC learns how to steer those options eventually.
