It is because even that trick is wrong
A.vowel is a sound, not a letter. Hence why the letter y sometimes produces a vowel sound and the latter u sometimes doesn't (making the saying wrong)

I was originally going to write more about how the consonant it makes sometimes is derived from a vocalic root.
