Why flash-freezing locks in quality rather than compromising it

People assume frozen means lower quality but that's not really how it works.

When beef gets flash-frozen, it happens within hours of processing at extremely low temperatures. That stops everything right at peak freshness and locks it in. The ice crystals that form are tiny, so they don't damage the muscle fibers the way slow freezing does. Texture and flavor stay intact.

Meanwhile fresh meat sitting in a display case for days isn't necessarily in better shape. By the time a properly flash-frozen steak reaches your door, it's in the same condition it was when it left the facility. That's the whole point.

Best ways to season a steak without overcomplicating it.

The best steak seasoning is usually the simplest. Kosher salt and coarse black pepper is genuinely all you need for a great crust and clean beef flavor. The key is being generous with both and applying them far enough in advance that the salt has time to work its way in.

From there, a little garlic powder is the most common addition and it works really well without masking the beef. Smoked paprika adds a subtle depth if you want something a little different. Beyond that you're mostly just adding noise.

The butter baste at the end does more for flavor than any seasoning combination you could put on beforehand. Garlic, rosemary, and thyme in the pan at the basting stage is all the extra flavor you need. The right way to thaw a frozen steak before you cook it

Thawing your steak the right way makes a bigger difference than most people think. The method you use affects texture, moisture, and how well it cooks.

Overnight in the fridge is always the best call. Leave it in the packaging, let it thaw slowly, and cook it within a day or two. Easy with good end results.

Short on time? A cold water bath is your next best option. Keep it in the sealed packaging, submerge it in cold water, and swap the water out every 30 minutes. Most steaks are ready to go in an hour or two that way.

What you really want to avoid is thawing at room temperature or in the microwave. Room temp thaws unevenly and the outside hits the danger zone before the center has even started. Microwave thawing starts cooking the edges before the middle is ready, making it almost impossible to get a good sear out of it.

One bonus tip: if you thaw in the fridge and leave it uncovered for the last few hours, you're already starting a dry brine without any extra effort.

Every dad has a steak preference – here's how to nail all of them

Every dad has his preference when it comes to steak, and the good news is there's a method that works for all of them.

If Dad likes a big bold crust, cast-iron is the move. Get it ripping hot while you pat the steak dry completely, and don't touch it until it releases. One flip, butter baste, and pull it a few degrees before his target temp.

If he prefers edge-to-edge doneness with more control, reverse sear is the way to go. 225-250F in the oven until the internal temperature reaches about 115-120F, then finish in a hot pan for the crust. Hard to overshoot it.

If he's a griller through and through, a two-zone setup works great. Sear over direct heat then finish on the cool side with the lid down. Same principle, different equipment.

Cast iron: Most people's go-to and for good reason. It holds heat better than anything else which means a consistent sear across the whole surface. It's great for thicker cuts like ribeyes and filets. It helps keep the heat steady while you baste. If you only own one pan, make it cast-iron.

Stainless: Needs more preheat than most people give it but once it's up to temp you get a genuinely great crust. Better suited for thinner cuts like flat iron or bistro steak where you're not spending a lot of time in the pan. Steeper learning curve than cast-iron but once you get the hang of it you won't look back.

Memorial Day weekend is one of the most popular grilling weekends of the year. Here are a few tips to make sure everything comes off the grill exactly how you want it!

Let your steaks come to room temp first. Take them out of the fridge about 30 minutes before you're ready to start cooking. A cold steak on a hot grill cooks unevenly. The exterior will be done long before the inside is ready.

Pat them dry before seasoning. Surface moisture is the enemy of a good crust. Pat them dry, season generously with salt and pepper, and let them sit uncovered for a few minutes before grilling.

Get your grill nice and hot. For a proper sear, you need very high heat. Let your grill preheat fully before anything goes on. It takes at least 10-15 minutes with the lid closed. A hot grill gives you that good crust, a warm grill just steams the meat.

Don't touch them. It's tempting, but once they're on, leave them alone. Flipping constantly prevents a crust from forming. Give it a flip or two, then let the grill handle the rest.

Rest before you cut. This one gets skipped the most. Pull your steak off the grill and let it rest for at least 5 minutes before cutting. The juices redistribute, and you won't lose everything on the cutting board.

What simple mistakes should you avoid when it comes to cooking steak during grilling season?

High heat and impatience. Those are the two things that ruin more steaks than anything else after you throw them on the grill.

When the temperature rises, the urge is to crank up the grill heat, thinking it'll speed things up. Unfortunately, it doesn’t work like that. It just chars the outside while the center stays raw. The easiest way to avoid this is to set one side of your grill to high for searing and keep the other side on low to finish the steak.

Another mistake people make is adding cold meat to a hot grill.

We flash-freeze at peak quality so the flavor and tenderness are locked in.
