I used to work at a restaurant where the POS system allowed you to apply the discount *after* entering the credit card payment details. So, you take payment, diner writes in a normal tip, you apply the employee discount, and then you enter whatever tip will equal the total that's written on the receipt. Another word for this is "theft" of course, but long as the table didn't request a second copy of the receipt, you could do this 10-12 times a week and not get caught. You could do the same thing with paper gift cards, which was a remarkably easy way to pocket $100 if the owners were treating you like shit that week.
