I like playing the Mario Kart 8 Deluxe Iron Man Challenge a lot. The challenge entails beating all 96 tracks on 200cc with hard CPUs while only getting 1st place. I have understandably lost this challenge many times, but there were a select few tracks I have never lost on in the times I have attempted this challenge. Even if I drove or used items suboptimally, it was never a close battle between me and the CPUs on any of these tracks. These are my breathers during a run.
Grumble Volcano was easily the easiest track. With all of the offroad that can get in the way, the other racers kept running into it. Also, split paths are an obvious obstacle to CPUs and Grumble Volcano has 2 of them plus the ability to avoid an optimal glider. Give the CPUs a choice and many will choose wrong over the course of the race. It also helps that Grumble Volcano is among the easiest courses to play optimally on.
DK Jungle is easy offline because of how many tight turns there are that the CPUs flop on. Combine that with the ending shortcut being much faster and it's no surprise that it's here.
Squeaky Clean Sprint also has many CPUs ignore the final glider shortcut that you can even take on lap 1. They also may struggle in the fan section before that and not take the turn tightly enough.
Rome Avanti is the odd one out here since it doesn't have any major shroomless cuts. It has split paths, but they're not significant time losses if the CPUs go the slower path. What I think it comes down to is CPUs struggling on the first lap's Colloseum staircase, some CPUs not taking the lap 3 glider, and CPUs taking the final turn too wide on laps 1 and 3.
